Renowned local chef brings scratch kitchen concept to Edwardsville’s Park North

The foodie scene in the Metro East continues to blossom, and one local chef is celebrating almost a year of success after opening a restaurant in collaboration with Park North Golf Club in July. Elevating the facility’s offerings for visitors throughout the region, Scotty’s Sports Bar and Grill was designed to merge a vibrant sports atmosphere with exceptional bar staples in a scratch kitchen.

Renowned St. Louis-area chef Scott Oglesby combined forces with managing partners Bob Timmermann, Jonathan Fowler, Scott Plocher, Dave Arvola, and Paul Wellhausen, to bring Scotty’s to life. Oglesby boasts 35-plus years in the food industry and has run nearly 20 establishments in his career, cooking for a variety of people from a World Series champion to important governmental figures.

“I wanted something more unique in Edwardsville, because there is a lot of competition in the great food scene here,” Oglesby said. “We’re not just a typical sports bar. We put a special spin on things, and everything is made from scratch. Many of our ingredients are sourced locally. I think people see us and at first think, ‘Oh, it’s just a place with regular bar food.’ But then they’re quite surprised when they taste our food and say, ‘Wow, that was actually really good.’ I believe having a scratch kitchen is important because there’s more passion behind it, and there’s truly a difference in taste.”

Scotty’s menu specializes in burgers, pizzas, and sandwiches, with a local standout being the famous Illinois horseshoe sandwich. Originating in Springfield, Ill., the horseshoe features Texas toast topped with a choice of protein, fries, and Scotty’s special beer cheese. Scotty’s uses beef tallow in the restaurant’s fryers, creating better flavor and providing a more natural alternative to seed oils.

“When Bob and I were talking about the development of Park North, we really wanted the food, the driving range and our 18-hole championship putting course to all work together and provide exceptional quality for people in the region,” Oglesby said. “Sometimes, you see venues like this, and the food takes a step back compared to the golf side. It can be an afterthought. We wanted to make sure Scotty’s was phenomenal even as a standalone restaurant. We have regulars who also just come to Scotty’s for the food.”

Oglesby said the beer tap system at Scotty’s produces some of the coldest beer in the area, with Anheuser-Busch helping set up the system. The Park North team has also gone to great lengths to make Scotty’s feel like a true sports bar, with multiple televisions and sports memorabilia decorating the restaurant.

The restaurant scene in Edwardsville is still growing, and Park North is positioning Scotty’s as more than just a normal sports bar, but a place where a renowned chef can showcase his skills to patrons from around the region.
